If you have yet to try the sensational, irrefutably appetizing, and downright delicious combination of coffee and cannabis, well then today is your day, my friend. I bring to you a message from the chocolatey heavens- moist and fluffy coffee, cannabis, and chocolate muffins. All topped with crunchy coconut chips and cacao nibs, and the tantalizing touch of cardamom and orange zest. You can thank me later.
Have you noticed all the good things in life start with the letter C? I’m talking cake, cannabis, coffee, cream, chocolate, coconut, cardamom, cute children, cuddly cats, colorful chalk, cupcakes, convertibles, .. oh does the list goes on. This would be a great Sesame Street episode.
Something almost as delightful as the letter C is knowing how to properly microdose. That’s right, microdose. Having a clear idea of your perfect micro-dosage is the secret to experiencing all the great feels of THC, without getting paranoid, anxious, or just plain sedated.
Microdosing, in MY definition, is consuming no more than 0.01-5.0 mg THC. You will often hear experts say to start with 5-10 mg THC, but I understand this range to be somewhat, to extremely, uncomfortable for some new takers. That being said, 10 mg THC can be a trip. I’ve known some to “microdose” at 10 and swore never to consume cannabis again. We don’t want that to be your experience.
To microdose I recommend starting very low and going slow, reaching a maximum of 30 mg THC per day. This max is the recommended limit by cannabis guru, Ethan Russo, and I take all of his advice to HEART. I also recommend pairing your THC product with a small amount of CBD. Cannabidiol, aka CBD, is THC’s chill cousin. CBD does not get you high, and when paired with THC, it can counteract some of the unwanted side effects of THC (anxiousness, paranoia, sedation.)
I used one of my favorite microdose friendly products by Somatik. This particular recipe includes their chocolate coffee beans, which are 3 mg THC per bean.
I truly believe these delicious and energizing muffins will be the perfect amount of psychedelic awesomeness that you’ve been seeking. If psychedelic awesomeness is not what you are seeking, then I highly recommend cutting that out and still try these muffins You will feel very nice, acutely aware, and ready to take on the day WITH a smile on your face.
Makes 12 Muffins
~ 3 mg THC per muffin
- 1 cup coconut milk, full-fat
- ¼ cup brewed coffee, cooled
- 1.5 cups all-purpose flour
- 1/2 cup cacao powder
- 1 tablespoon coffee, finely ground
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cardamom
- 3/4 teaspoon salt
- 2 eggs, room temperature
- 1/2 cup packed brown sugar
- ¾ cup coconut oil
- 1/2 cup plain Greek yogurt (non-dairy yogurt as sub)
- 1 teaspoon vanilla extract
- 12 chocolate covered coffee beans, finely chopped (I use THC infused Somatik beans)
- ¼ cup cacao nibs, roughly chopped
For Crunchy Toppings:
- roasted coconut chips
- cacao nibs
- orange zest
Preheat oven to 350 degrees Fahrenheit. Grease muffin sheet or place with muffin cups, silicone cups are best.
In a small saucepan, combine coconut milk and coffee. Keep on low heat until needed for wet ingredients. Make sure it does not make a film on the top layer.
In a medium bowl, combine flour, cocoa powder, ground coffee, baking soda + powder, cardamom, and salt. Whisk together and set aside.
In a large bowl, combine eggs, coconut milk + coffee mix, brown sugar, coconut oil (melted, but cool and liquidy), Greek yogurt. Whisk just until combined and set aside.
Take your 12 chocolate covered Somatik espresso beans and seriously chop. Use a food processor or melt chocolate in double boiler. The goal is to thoroughly combine the infused chocolate to the muffin mixture so the THC will be evenly spread throughout the finished product.
Whisk dry ingredients into wet ingredients, just until combined. Do not overmix.
Fold cacao nibs and melted or minced Somatik beans into the batter.
Using a tablespoon or ice cream scooper to scoop an even amount of batter into each paper cup. Since the muffins have THC in them, be extra aware of evenness.
Sprinkle on crunchy toppings like cacao nibs, roasted coconut chips, and sugar.
Place in oven and bake for approximately 10-15 minutes, or until batter doesn’t stick to a toothpick. The amount of time entirely depends on your oven.
Let cool for a few minutes, add orange or grapefruit zest, and enjoy responsibly.
